Cashmere is one of the most precious gifts of nature. It evokes quality, luxuriousness, and something that is a labor of love to produce. Our Cashmere is a silky and wonderful blend of Mourvedre, Grenache, and Syrah. Just as with the processing of cashmere, the production of these meticulously farmed grapes and the blending of the components that result in this wine is something achieved only with extraordinary time and skill. Vineyard Notes:
Contra Costa County provides the lion’s share of the grapes for this blend. Careful attention to the Massoni Grenache vineyard in Oakley involves cluster thinning and leaf pulling. This increases the fruit concentration. Big Break Grenache is harvested from older lower yielding dry-farmed vines. The Oakley Syrah experiences warm days and cool nights. And the Mourvedre, planted in sand soil, is dry-farmed.

Production Notes:
The individual lots of grapes were harvested separately according to ripeness and balance of acidity. The grapes underwent total de-stemming and a very gentle crushing to ensure a large proportion of whole berries in the must. Fermentation was carried out in stainless steel with select cultured yeasts at controlled temperatures. The grapes were pressed at dryness then settled for ten days and racked to 25% new French oak with a dark toast level for nine months.

Wine Maker's Notes:
We initially created this blend as an auction lot for the Hospice du Rhone held in Paso Robles each year. Cashmere is a very flavorful, smooth wine offering big cherry, raspberry and chocolate notes with hints of cracked black pepper and plum.more

Throughout its history, Yalumba has been willing to take a risk and back its judgement on a new variety, a new style, or a new direction, without losing sight of traditional strengths. Nowhere is this more evident than in the winery’s pioneering work in Australia with the rare and alluring Rhone grape variety, Viognier.

The vine cuttings shown on the Yalumba Viognier label depict the Hill Smith family's ability to think outside the square in the quest for quality. Such risk-taking and daring to make a difference has put Yalumba ahead of the rest in the ever-changing world of wine.

Wine Maker's Notes:
After harvest the Viognier grapes were gently pressed and the juice handled with controlled oxidation. The wine was fermented with indigenous yeast in stainless steel. These grapes, and the indigenous yeast that have transformed them into wine, have created layers of flavour and richness. After ferment the wine was left in yeast lees for a few months to increase the complexity and creaminess of the wine and add richness to the palate.

Bright straw with green tinges, the 2008 Y Series Viognier has aromas that typify this exotic variety, namely jasmine, white peach and honeysuckle. These aromas are mirrored in the palate that displays richness and texture from wild fermentation and lees aging. With a clean, persistent finish, complemented by some exotic spices, this wine will reward if served with five spice chicken.more
