Salmon-pink, with bright copper reflections; fine, consistent bubbles. Nose is fresh, slightly vinous, with a delicate scent of morello cherry. Palate is lively on the attack. A pleasant cremant that confirms the harmony of the nose. Fine and pleasant, with no bitterness.
| Wine maker notes |
| Cremant production follows the highly-rigorous and painstaking traditional method that is also used in Champagne production. The grapes are selected and picked by hand, then transported in small boxes of 20 kilos each. The grapes are pressed in whole clusters. “Assemblage” and blending is also done using the traditional method. Second fermentation takes place in bottle. Maturing then takes place over 24 months “sur latte.” The wine is then disgorged, topped up, and rested a further two months before shipping. |
