In addition to using time-honored techniques such as malolactic fermentation, lees stirring and whole-cluster pressing, Chimney Rock ferments a portion of the grapes in small, custom-made stainless steel barrels. This gives the wine a rich mouthfeel while preserving fruit purity and structural integrity. A very sophistated take on traditional Sauvignon Blanc!
